Banana’ing it Breakfast style

There is no doubt that I love coconut. I add this goodies good in almost everything and anything. My salad, my smoothies, my curry, my dessert, etc. You name it! I even dedicated the name of my blog to demonstrate my love/addiction for coco. Today, I want to share one of my go-to breakfast recipes that is super healthy, delicious and easy to make with you guys. It’s banana oatmeal with coconut flakes. Yummmmm

-1 cup of water

-1/2 cup of Irish oats

-1-2 bananas chopped (the ripe ones are better) ❤

-1 tbsp of granolas of your choice

-Brown sugar + cinnamon (optional)

-2-3 tbsp of shredded coconut flakes

Oatmeal1

How to:

-Use a small pot, bring water to boil then add in the oatmeal

-Cook for 1 minute in medium heat then simmer down in low heat for another 2-3 minutes

-Wait for the oats to cool down a bit then add chopped banana, shredded coco, brown sugar and other spices (optional)

-I also like to add in some coconut milk to maximize the flavor

Alternatively, if you are not a big fan of banana, you can make a delicious blueberry sauce topping by combining 1 cup of frozen blueberries with 1 1/2 cup of water, 1 tbsp of raw honey, 1/4 tsp of vanilla extract, 1/2 tsp of cornstarch over medium heat for 4-5 minutes! Definitely a game changer. Then just add shredded coconut on top 😉
