I have a weak spot (extremely weak) for chicken. I swear on my beloved pillow that if it wasn’t because of that damn delicious thing, I would be a straight up good vegan by now. But hey, everything in moderation and I like to enjoy life/ eat my way to death sometimes. Anyway, my favorite method to cook up my chicken is to oven roast the delushious baby after 7-8 hours of marinating. I know, that’s too much time to be wasted on some chicken but hey, it’s totally worth it. Plus, it’s healthier this way instead of buttermilk fried chicken okay (which I’m totally a master chef at but I will pretend to be very healthy and not post a recipe of that…just yet!)
*BUZZ KILLER ALERT: Before you can roll up your sleeves and get down dirty with this recipe, you may have to make a trip to the Asian market to purchase this seasoning thing called five spice powder (or order it on ebay/amazon), but it’s soooo worth it I promise.
AND NOWWWWWWWWWW INTRODUCING MY SEXY CHICKEN RECIPE:
-4 chicken thighs (not drumsticks, and I clearly ate one before I even took a picture)
-1 tsp of five spice seasoning (yes you MUST do it)
-2 table spoon of soy sauce (I used bragg’s liquid amino for a healthier alternative)
-2 teaspoon of freshly grounded pepper (if you do not like peppery taste, just do 1)
-a pinch of salt to taste
-2 tablespoon of honey
-Red pepper flakes if ya like it hot like me.
Dipping/extra sauce to serve after:
-a bit of honey
-the juice came out of the baked chicken
-Some soy sauce
-Some coconut sugar to taste
-A plash of lemon juice
(I normally eye ball this and go along with my taste bud so I don’t wan’t to be too specific on this part)
-mix all of the ingredients together in a large bowl (minus the stuff for the dipping sauce duh)
-Wash the chicken thoroughly with salt water then use a knife to do small, delicate stabs all over the chicken pieces so the seasoning get deep in it hmmm
-Combine the chicken + seasoning ingredients in a ziplog bag and let the baby have its beauty sleep for 7-8 hours, if you MUST RUSH, just do 4 hours.
-Preheat the oven to 350 degree, and then bake the chicken on a foiled tray with skin up for twenty minutes
-Remove from oven, look at that juicy juiceeee came out of it. So nom. NOT YET, you still have to flip the chicken over to bake the lower part and let the skin soak up more flavor.
-Bake the lower part (non skin) for another 10 minutes at 250 degree (yeah this recipe is annoying I know)
-Then, lastly, brush some extra honey on the skin again and bake with the skin face up for another 5 minutes to get that crispiness (If you are too hungry to care at this point, just tear that shit up and eat it *mouth burning*)

Serve with rice, cucumber salad and sauce.
